This year in our Roly’s Fudge Pantries we’ve been working on our Cherry Bakewell Fudge recipe to make it better than ever! The fudge flavour no longer has glace cherries; instead, we’ve introducing a revamped fudge flavour full of real juicy cherriesonly the best of 100% cherry juice, and just a touch of natural almond essence.

This flavour is being rolled out across our Roly’s Fudge Pantries. One shop that is excited about our new improved Cherry Bakewell Fudge is Roly’s Fudge Bakewell, home of Cherry Bakewell Fudge. Greg, the owner of Roly’s Fudge Bakewell as well as fudge pantries in York, Bowness-on-Windermere and Lincoln, has written the following to welcome our all natural Cherry Bakewell Fudge, and to say goodbye to the glace cherry.

Farewell ye Glacé Cherry!

Zombie CherriesCherries have been enjoyed in Europe since 4,000 BC.  Indeed in France, cherries were grown commercially since the Middle Ages.  However the candying of the fruit did not come about in order to satisfy the sweet teeth of the French.  And so GlacéCherries were devised as a method of preserving the fruit.

So dedicated were the French that it is said they inscribed the method of candying the cherry on the inside of their copper cauldrons, as generations perfected the recipe.  Whilst originally honey was used as the preserving agent, as the process became industrialised, sugar syrups and red food colourings replaced the natural alternative. 

Herein lay the problem for Roly’s Fudge, where we collectively pride ourselves on the use of natural ingredients!  

The modern glacé cherry is boiled to death and submerged in a coloured glucose syrup solution.  Here, its tartness and fleshiness is drained and replaced with said red solution.  Natural out, artificial in.  And so every quality which made the cherry a cherry, is lost, and the result is what we see in those tubs from Bookers.  In effect, cherry zombies are created.  See the most scientific illustration diagram above for your reference!

So farewell ye glacé cherry. You will always have a place in my heart. I shall think of you and reminisce as I pick you off the top of my Mr Kipling and eat you first as I always have, but it’s time to move on.
